Whether you’re cooking for a small group or family, I have several options for quick and easy meals, many with ingredients you have on hand in your pantry or refrigerator!
SIMPLE STEAK SALAD
3/4 pound Lane Legacy flank steak
3 heirloom tomatoes (sliced)
4 cups arugula
1/2 red onion (optional)
2 tablespoons olive oil
thinly sliced provolone
2 tablespoons balsamic vinegar
Heat a large skillet over medium heat and season steak with salt and pepper on both sides. Once hot, place steak in skillet to cook, about 3-4 minutes per side depending on steak thickness and cooking preference.
While the steak is cooking, cut up tomatoes, cheese, and onion.
Once steak is done, let rest for a few minutes before slicing. Slice steak into small strips.
Prepare salad by adding sliced tomatoes, onions, cheese, and arugula to a plate. Top with sliced steak and drizzle with olive oil and balsamic. Sprinkle with additional salt and pepper if desired.
